A good snack because it has protein and can be made allergy free. I took the Chex mix recipe and made it dairy, peanut and wheat free.
9 cups of Rice Chex cereal
1 cup Enjoy Life dairy free chocolate chips
1/2 cup of soy nut butter or sunflower butter
1/2 of dairy free margarine
1 teaspoon of vanilla
1 1/2 cups powdered sugar
In large bowel measure, cereal; set aside
In a 1 quart microwavable bowl, microwave chocolate chips, soy nut butter and margarine uncovered until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal stirring until evenly coated. Pour into 2 gallon resealable food storage plastic bag.
Add powered sugar. Seal bag; and shake until well coated. Spread on wax paper to cool store in airtight container or refrigerator.
